We are not translating India for anyone. We are just bringing what works, and most of it has never been on an American shelf.

Chrysopogon zizanioides

The root of a grass that cools a room. Through a north Indian summer, khus screens are hung across open windows and kept wet; air that passes through arrives cool, and green, and slightly sweet. It is the smell of the hottest month being survived.

Garcinia indica

A seed butter that sits hard as wax at room temperature and turns to oil the moment it meets skin. In the Konkan it has always been the answer to heels that have split open by the end of a dry season. It is not a delicate ingredient. It is a working one.
